Carnivore "Mac and Cheese" (Zero Pasta)

Craving comfort food? This recipe uses ground beef and a rich cheese sauce to deliver the ultimate "mac and cheese" experience, without the pasta or carbs.

Ingredients:

  • 1 lb 80/20 ground beef

  • 1 cup heavy whipping cream

  • 1½ cups sharp Cheddar cheese, grated from a block

  • ½ cup Parmesan cheese, grated

  • 2 tablespoons butter

  • Coarse salt

Instructions:

  1. Cook the Beef

    Brown the ground beef in a large skillet until fully cooked. Don't drain the fat, that's where the flavor is. Season generously with coarse salt.

  2. Make the Sauce

    In a separate saucepan, melt the butter over medium heat. Add the heavy whipping cream and let it simmer gently for 2-3 minutes until it begins to thicken slightly.

  3. Add the Cheese

    Reduce the heat to low. Slowly whisk in the grated Cheddar and Parmesan, a handful at a time, until the sauce is smooth and creamy.

  4. Combine Everything

    Pour the cheese sauce over the cooked ground beef and stir until every bite is coated.

  5. Finish and Serve

    Let everything simmer together for another 2 minutes so the flavors come together. Serve hot in a bowl.

Storage Tip:

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently over low heat on the stovetop or in the microwave, adding a splash of heavy cream or a small pat of butter if the cheese sauce has thickened. For longer storage, freeze individual portions for up to 2 months and thaw overnight in the refrigerator before reheating.
