Bacon-Wrapped Meatballs (Carnivore-Approved)

Ingredients:

  • 1 lb ground beef (80/20 or fattier is ideal)

  • ½ lb ground pork (optional, for added flavor/fat)

  • 1 egg (acts as a binder)

  • ½ tsp salt

  • ½ tsp garlic powder (optional, skip if you're strict carnivore)

  • 1 tsp grated Parmesan

  • 6–8 slices of bacon (cut in half)

Instructions:

  1. Preheat oven to 400°F (or air fryer to 375°F).

  2. In a large bowl, combine ground beef, pork, egg, salt, and optional garlic/Parmesan. Mix until just combined—don’t overwork it.

  3. Form into 1.5-inch meatballs.

  4. Wrap each meatball with a half-strip of bacon and secure with a toothpick if needed.

  5. Place on a wire rack over a baking sheet (or directly in the air fryer basket).

  6. Bake for 25–30 minutes, or until bacon is crisp and internal temp hits 160°F. In an air fryer, go for about 15–18 minutes, flipping halfway through.

  7. Rest for 3–5 minutes before eating (if you can wait).

Optional Carnivore Dip:
Mix sour cream with a bit of beef tallow or bacon grease and a pinch of salt for a fat bomb dipping sauce.
